Lemonade Chicken

I found this in a "Taste of Homes" cookbook.

6 boneless skinless chicken breasts
3/4 cup lemonade concentrate ( I just used the whole can)
3 TBSP Ketchup
2 TBSP Brown Sugar
1 TBSP Cider Vinegar
2 TBSP Cornstarch
2 TBSP Cold Water

Place chicken in a slow cooker. Combine the lemonade, ketchup, brown sugar and vinegar; pour over chicken. Cover and cook on low for about 2 1/2 hours (I left mine in all afternoon)
Remove chicken and keep warm. For gravy, combine cornstarch and water until smooth; stir into cooking juices. Cover and cook on high for 30 minutes or until thickened. Return chicken to the slow cooker, heat through.

I served it over rice

Honey-Lime Chicken

This is also from the book "Dinner is Ready"

4 Boneless skinless chicken breast halves
1 1/2 tsp garlic salt
1 TBSP oil
1 20 oz can pineapple rings
1/4 cup honey
3 TBSP lime juice
2 TBSP soy sauce
2 tsp cornstarch

Cut Chicken in strips and sprinkle with garlic salt. Brown in oil. Drain pineapple. Add 1/4 cup pineapple juice to skillet. Cover and Simmer 6-8 minutes or until chicken is done. Remove chicken. Add honey, lime juice, soy sauce, cornstarch and rest of pineapple juice. Bring to boil. Cook and stir until thick and clear, about 1 minute. Serve chicken, sauce, and pineapple rings over rice.

Brown Sugar Pork Ribs

I have this book called "Dinner is Ready" by Deanna Buxton. That is where this recipe comes from.

3 pounds boneless pork ribs
1 onion, chopped
2 cloves garlic, minced
3 TBSP butter
2 TBSP soy sauce
3/4 cup lemon juice
1 tsp salt
1/2 tsp pepper
2 cups brown sugar

Place ribs in crock pot. Cook on high 3 hours. DRAIN. Cook onion and garlic in butter until soft. Add remaining ingredients. Pour over ribs. Cook on high 2 more hours.
Serve over rice.

*We had this the other night and it was really good. I cooked the onions and garlic in olive oil instead of butter but everything else I did just as it says.
